Steps to Certification

Introduction

Initial waste assessment

The PGF team will conduct a snapshot assessment of one day’s operational waste, providing bins and handling off-site processing. This allows PGF to generate recommendations for reduction and diversion goals.

One

Individualized food waste reduction plan

The PGF team will create a personalized plan to prevent food waste based on the assessment and your establishment’s feedback. This may include measures like “offer bread upon request” or “create daily specials using surplus ingredients.”

Two

Use of sustainable products

Source disposable products that are compostable, biodegradable, recyclable, or made from recycled content. No polystyrene (aka Styrofoam).

Three

Tailored waste diversion plan

Guided by the waste assessment and your establishment’s feedback, the PGF team will create a personalized plan to determine what to do with surplus items, such as recycling, composting, donation, etc.

Four

Utilize green cleaning products

Reduce the use of toxic cleaners wherever possible and replace them with plant-based and/or biodegradable cleaners.

Five

Reduce water and energy consumption

Implement strategies to reduce and conserve vital energy and water.

Six

Maintain spaces

Properly maintain grease traps and kitchen hoods. Ensure the kitchen, front of house, and outside areas are clean and free of debris at all times. Use native plants in landscaping whenever possible.
